This post was not in the lineup. And if you know me, I have a list or calendar for everything.
But this past weekend I was in West Palm Beach down in Florida and I visited an all-around great coffee shop. Itβs called Subculture Coffee, and itβs as hipster as the name suggests. I was pretty excited to see that they had an array of raw vegan cookies, and grabbed a box
Yeah, I had cookies for breakfast. Try and stop me.
My tea was great, the cookies were yummy, and I just seriously felt the need to recreate that cafΓ© experience at home. Surprisingly enough, I felt pretty comfortable adapting the recipe without searching up the original ingredients.
And I am sooo thrilled with the result.
Guys, these cookies are unreal. Theyβre also healthy. (Can you believe it?!). And they take 5 minutes to make before you stick them in the freezer to chill.
These cookies get their sweetness from maple syrup, vanilla extract, and medjool dates. The oats and coconut add texture, and the almond butter gives it an incomparable flavor.
Six ingredients, less than 10 minutes, and made entirely in your food processor or blender, these bites are the perfect way to kick off your morning healthily and deliciously.
There seems to be a certain amount of debate as to whether maple syrup/agave/vanilla are raw, so Iβm just going to avoid all the hassle and call these βalmostβ raw. (I use raw almond butter). Iβm sure using vanilla bean and a raw liquid sweetener would make these totally raw, so feel free to make that easy substitution if you wish.
Whatever your diet, these breakfast cookies are easy, light, and have a surprising amount of staying power to keep you full till lunch or replenish your energy after a workout.

- 1 heaping tbsp raw almond butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 6 large medjool dates, pitted
- ΒΌ cup rolled oats
- ΒΌ cup unsweetened shredded coconut
- Pulse rolled oats and dates in a food processor until combined.
- Add almond butter, maple syrup, and vanilla extract and pulse until soft dough forms.
- Add the coconut and process until all well combined.
- In teaspoons, form balls and flatted with your fingers.
- Place on a parchment paper lined baking sheet and freeze for 5-10 minutes or until firm.

I’m pretty sure vegan cookies can sub for a breakfast. I mean, they’re sort of healthy, right?! And these cookies look great. I made something similar back in college and loved them. Haven’t made any in a while though – definitely trying out your recipe next π

What a cool looking place, love the hipster little cafes that have a modern but homely feel. And these cookies look amazing. My bestie is totally into raw food at the moment, my town didn’t catch onto this craze, so her options for eating out are limited. This recipe will be a cracker.
