'Almost Raw' Almond Butter Breakfast Cookies

Easy, sweet, and (almost) raw vegan almond butter cookies that are delicious and filling. Dessert for breakfast has never been this healthy!
Ingredients
  • 1 heaping tbsp raw almond butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 6 large medjool dates, pitted
  • ¼ cup rolled oats
  • ¼ cup unsweetened shredded coconut
Instructions
  1. Pulse rolled oats and dates in a food processor until combined.
  2. Add almond butter, maple syrup, and vanilla extract and pulse until soft dough forms.
  3. Add the coconut and process until all well combined.
  4. In teaspoons, form balls and flatted with your fingers.
  5. Place on a parchment paper lined baking sheet and freeze for 5-10 minutes or until firm.
