'Almost Raw' Almond Butter Breakfast Cookies

Serves: 8-9 cookies
- 1 heaping tbsp raw almond butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 6 large medjool dates, pitted
- ¼ cup rolled oats
- ¼ cup unsweetened shredded coconut
- Pulse rolled oats and dates in a food processor until combined.
- Add almond butter, maple syrup, and vanilla extract and pulse until soft dough forms.
- Add the coconut and process until all well combined.
- In teaspoons, form balls and flatted with your fingers.
- Place on a parchment paper lined baking sheet and freeze for 5-10 minutes or until firm.
