Sometimes the best desserts are hybrids.
I’m talking brookies, donut muffins, and of course, cronuts.
So when I decided to make a fruit crumble on this blog, I knew that my topping was going to be based off of an oatmeal cookie. And not just any oatmeal cookie, but one studded with buttery macadamia nuts. This is good stuff, people.
This crumble is almost a one-skillet dessert! I cook the stone fruit (I used cherries and plums) on the stovetop in the skillet itself, and then top it off with crumble cookie topping and send the skillet to the oven to crisp up. The crumble topping does need to be made in a separate bowl, though, but it’s totally worth it.
This dessert is a classic- easy to make, and a total crowd pleaser- you can’t go wrong with a fruit crumble! As the recipe speaks for itself, I just wanted to update everyone regarding a couple new features on my blog.
I finally got with the program and added ‘share’ buttons to the bottom of my posts! This should (hopefully) make it much easier for everyone to pin, tweet, like, or +1 any of my posts.
I’ve also created a new page of tags, organized by different special diets, types of preparation, world cuisines, holidays and events, and my favorite/most commonly used ingredients! I know the search bar can be notoriously unreliable, so I went through all my posts and re-tagged them to make my archives most organized.
I hope everyone is having a great summer so far and that you give this crumble a try!
- 1 cup cherries, pitted (about 18)
- 4-5 plums, halved and pitted
- 2 tbsp butter
- ¼ cup brown sugar
- 1 tsp maple syrup
- ⅔ cup macadamia nuts, chopped
- ⅓ cup flour
- ⅓ cup oats
- ¼ cup brown sugar
- 3 tbsp cold butter
- 1 tbsp maple syrup
- Preheat oven to 350 F.
- In a 10-inch cast iron skillet, combine filling ingredients over medium heat and let cook for 15-20 minutes, until simmering.
- Combine topping ingredients in a separate bowl until crumbly and combined.
- Pour excess liquid out of cast iron skillet and top fruits with crumble topping.
- Bake for 12-15 minutes or until top is golden brown and filling is bubble.
- Cool on wire rack before serving.
