{Vegan} Macadamia Oatmeal Cookie Stone Fruit Crumble

- 1 cup cherries, pitted (about 18)
- 4-5 plums, halved and pitted
- 2 tbsp butter
- ¼ cup brown sugar
- 1 tsp maple syrup
- ⅔ cup macadamia nuts, chopped
- ⅓ cup flour
- ⅓ cup oats
- ¼ cup brown sugar
- 3 tbsp cold butter
- 1 tbsp maple syrup
- Preheat oven to 350 F.
- In a 10-inch cast iron skillet, combine filling ingredients over medium heat and let cook for 15-20 minutes, until simmering.
- Combine topping ingredients in a separate bowl until crumbly and combined.
- Pour excess liquid out of cast iron skillet and top fruits with crumble topping.
- Bake for 12-15 minutes or until top is golden brown and filling is bubble.
- Cool on wire rack before serving.
