If you got lost somewhere in that endless title, don’t worry.
Just look at these blondies and everything will be okay.
I honestly have no idea where the concept for these bars came from, because usually buying a jar of cookie butter ends with me licking a spoon and feelingย verrry full. When it comes to biscoff spread, I rarely spare a thought towards baking with it. It just doesn’t last that long in my house.
For those of you who don’t know what cookie butter is… where have you been?! Cookie butter, or biscoff spread, is made of crushed biscoff cookies. It’s also vegan! The taste is honestly difficult describe. I’m going to call it crack in a jar.
Since trying this 4-ingredient PB fudge, I’ve been dying to experiment with different kinds of nut butters, and inevitably, cookie butter. The results were (predictably) amazing. I knew this fudge was unstoppable and needed to be taken to the next level.
I was planning on putting the fudge into dark chocolate cookies (I still might… there’s no end to the cookie butter madness), but then I thought about what would actually complement the unique subtle spiceย in biscoff spread. And my mind went straight to cinnamon.
The rest is history.
These bars are moist, chewy, and studded with cookie butter goodness. As if the fudge wasn’t enough, the blondies themselves are made with cookie butter (and a heavy-handed dose of cinnamon).
This recipe uses minimal ingredients and yields not only a batch of blondies, but also a generous amount of leftover fudge (only about half the recipe goes into the blondies). It also makes your entire house smell like warm snickerdoodles and melty cookie butter goodness.
I’m salivating.
- 1 11oz jar of cookie butter, divided
- 2 cups powdered sugar
- ½ cup (=1 stick) vegan butter
- 1 tsp vanilla extract
- 1 cup brown sugar
- ⅓ cup coconut oil
- 1 cup flour
- ¼ cup almond milk
- Melt ½ a cup of cookie butter and one stick of vegan butter in a large glass or other microwave safe bowl. Stir thoroughly to combine.
- One cup at a time, add in powdered sugar and mix well.
- Add vanilla and combine.
- Line a 4x6 inch pan with aluminum foil and press fudge mixture into pan. Freeze for 1-2 hours.
- Once the fudge is set, chop it into chunks.
- To make blondies, preheat oven to 350ยฐ F
- Whisk together brown sugar, remaining cookie butter, and coconut oil.
- Add flour and stir well.
- Add almond milk and mix till thoroughly combined.
- Add ½ your fudge chunks and stir until just mixed.
- Line an 8x8 pan with greased parchment paper and pour in blondie batter.
- Bake for 25-30 minutes.
- Allow to cool completely (this is important!) before cutting and serving.

Biscoff Spread was what I found when I Googled “Cookie Spread” and I was sent to their main page… it said a few things that *aren’t* in the cookies and spread, but I couldn’t find what *is* in it ๐ Are they vegan? I have to ask, have had some bad run-ins with eggs and butter lately. (My body was the final deciding factor when I began to eat a plant-based diet, I can’t digest anything else.
Fun recipe. it looks like you have some excited people who hopefully did some baking! I haven’t had a snickerdoodle in years and Googled a vegan recipe – ended up here and these do look fun and yum!

The spread from Trader Joe’s (where I buy it) contains no dairy or eggs! These bars are super fudgy and cinnamon spice-y, I hope you give them a go!
