These vegan blondies are infused with cookie butter and cinnamon goodness, studded with cookie butter fudge chunks, and baked to decadent perfection using only 8 ingredients!
Ingredients
1 11oz jar of cookie butter, divided
2 cups powdered sugar
½ cup (=1 stick) vegan butter
1 tsp vanilla extract
1 cup brown sugar
⅓ cup coconut oil
1 cup flour
¼ cup almond milk
Instructions
Melt ½ a cup of cookie butter and one stick of vegan butter in a large glass or other microwave safe bowl. Stir thoroughly to combine.
One cup at a time, add in powdered sugar and mix well.
Add vanilla and combine.
Line a 4x6 inch pan with aluminum foil and press fudge mixture into pan. Freeze for 1-2 hours.
Once the fudge is set, chop it into chunks.
To make blondies, preheat oven to 350° F
Whisk together brown sugar, remaining cookie butter, and coconut oil.
Add flour and stir well.
Add almond milk and mix till thoroughly combined.
Add ½ your fudge chunks and stir until just mixed.
Line an 8x8 pan with greased parchment paper and pour in blondie batter.
Bake for 25-30 minutes.
Allow to cool completely (this is important!) before cutting and serving.
