Vegan Cookie Butter Fudge Chunk Snickerdoodle Blondie Bars

These vegan blondies are infused with cookie butter and cinnamon goodness, studded with cookie butter fudge chunks, and baked to decadent perfection using only 8 ingredients!
Ingredients
  • 1 11oz jar of cookie butter, divided
  • 2 cups powdered sugar
  • ½ cup (=1 stick) vegan butter
  • 1 tsp vanilla extract
  • 1 cup brown sugar
  • ⅓ cup coconut oil
  • 1 cup flour
  • ¼ cup almond milk
Instructions
  1. Melt ½ a cup of cookie butter and one stick of vegan butter in a large glass or other microwave safe bowl. Stir thoroughly to combine.
  2. One cup at a time, add in powdered sugar and mix well.
  3. Add vanilla and combine.
  4. Line a 4x6 inch pan with aluminum foil and press fudge mixture into pan. Freeze for 1-2 hours.
  5. Once the fudge is set, chop it into chunks.
  6. To make blondies, preheat oven to 350° F
  7. Whisk together brown sugar, remaining cookie butter, and coconut oil.
  8. Add flour and stir well.
  9. Add almond milk and mix till thoroughly combined.
  10. Add ½ your fudge chunks and stir until just mixed.
  11. Line an 8x8 pan with greased parchment paper and pour in blondie batter.
  12. Bake for 25-30 minutes.
  13. Allow to cool completely (this is important!) before cutting and serving.
