Today I went to the gym to run a little and get in some cardio, because I’m awful at running outside and I’m on break from dance. I was preparing myself for a slightly more busy environment, but little did I realize just how many people were working off their holiday indulgences.

It’s great to see that people are working out and making healthy resolutions, but I’m looking forward to the crowd thinning out as the year goes on. This year, my resolutions are to eat gluten-free one day a week and to do as much strength training as I do cardio.

I’m going to start out my year by making January the healthiest month of my life, so all the recipes posted on Whisk & Shout this month will be 100% guilt-free and nutritious! No more cheat meals (at least for a month!)

Tomato Basil Tofu Scramble with Avocado and Saffron | Whisk and Shout

This tofu scramble is simple, quick, and delicious. The basil and saffron are what provide most of the flavoring, with only a small amount of garlic salt and black pepper to season. Baby spinach, rainbow chard, and baby kale, as well as sliced tomatoes, add more nutritional value to this dish.

There are a fewΒ substitutions that can be made easily:

If you can’t get your hands on saffron, 1/4 tsp of turmeric will add an earthy flavor and a rich color to the scramble. Any leafy greens can be used in place of the mix that I used (try kale, arugula, or swiss chard!). And lastly, feel free to use plain sea salt and a dash of garlic powder instead of garlic salt.

Tomato Basil Tofu Scramble with Avocado and Saffron

Total time:  15 mins
Serves: 2 (small) or 1 (large)
 
Ingredients
  • ½ tbsp olive oil
  • 2/5 of a 14-oz block of firm tofu
  • ½ tomato, cleaned and sliced
  • 1 stalk (10-15 leaves) of fresh basil, roughly chopped
  • 1 handful mixed greens
  • ¼ avocado, diced
  • ¼ tsp garlic salt
  • ¼ tsp black pepper
  • 3-4 strands saffron
Instructions
  1. In a medium skillet, heat your olive oil over low-medium heat.
  2. Wrap the tofu in a towel and press for about 10-15 seconds. Using your hands, crumble into the pan.
  3. Add the tomatoes and cook for 2-5 minutes, until the tofu is lightly sizzling.
  4. Add the basil and mixed greens, and toss.
  5. Increase the heat to medium-high and add salt, pepper, and saffron.
  6. Cook for an additional 1-3 minutes, or until the greens are wilted and the tofu is fragrant.
  7. Serve topped with avocado and alongside mixed greens.

    This scramble looks incredible, Medha! I’ve only had tofu a few times, so I’m loving that you used it for this dish. And the tomato and basil combo sounds delicious, especially with the avocado! Such a light and healthy breakfast!
