Classic Kale Salad {Vegan + GF}

Despite the fact that Wesleyan is the runner-up for most vegan/vegetarian friendly campus in the country, there are still a couple things I just don’t get to enjoy as regularly when I’m at school.

One of those being kale. (Also: baked tofu, berries, pesto). Kale is my salad green of choice, and often, the spinach or spring mix at the cafeteria just doesn’t cut it for me.


What does this mean? It means when I’m home on break, I’m actually craving kale salad. It’s like, all I eat on break (no joke). So when I was reviewing Eat Like You Give a Damn: Recipes for the New Ethical Vegan last month, this was the first recipe I jumped to.

And it was killer.

But then I realized that a kale salad recipe was much better suited to Healthy January than to my pre-Christmas lineup and I blessed you all with this brownie recipe instead.

But now the holidays are over, and we are back to the greens. This salad is so simple- just kale, the most deliciously savory/garlicky/tahini-y/soy sauce-y dressing, and some seeds for protein. You could top this with baked tofu, shaved cheese, or toss it with farro or couscous for more substance! Either way, this salad is ridiculously satisfying.

Classic Kale Salad {Vegan + GF}

Prep time:  15 mins
Total time:  15 mins
Serves: 4
 
This kale salad is a classic- fresh kale topped with a creamy and savory garlic tahini vegan dressing and sesame seeds!
Ingredients
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 2 tbsp tamari or soy sauce
  • 2 tbsp nutritional yeast
  • 1 tbsp flax meal
  • 2 tsp garlic powder
  • ¼ cup water
  • 8-10 cups kale, shredded and washed
  • ⅓ cup toasted sesame seeds
Instructions
  1. Combine all ingredients except kale and sesame seeds in a bowl and whisk until homogenous.
  2. In a large bowl, combine kale and dressing, and massage with your hands for about 2-3 minutes.
  3. Top with sesame seeds and serve immediately or let rest for kale to absorb flavors even more.
