I’ve got to tell you up front, these muffins are really fun to make.
They’re not necessarily super easy (not hard, either!) or especially fun to decorate, but the warm, spicy smells that float around the house make these muffins a joy to bake.
I might be the only person ever who loves peeling apples.
Maybe it’s because I love being in the fall and holiday spirit, and peeling, coring, and dicing crisp, sweet apples does it for me. Or maybe because it’s relaxing and you get to sneak little bits of honeycrisp apple as you do it!
Either way, you only have to prep one apple for this recipe, so if it’s not your thing, don’t worry.
That’s because these muffins are small batch… the recipe makes 9-full sized muffins. This makes this recipe perfect for anyone who wants to have fun baking, but doesn’t want to be drowning in muffins for weeks to come!
The base for these muffins is one of those rare cupcake/muffin bases that is just as good plain as it is with the topping. Even if you’re a die-hard frosting fanatic, I can guarantee you’ll love these muffins even without the glaze.
The muffins are seasoned with ginger, allspice, and a TON of cinnamon. Just the way it should be! They are packed to the brim with rich, deep, autumn flavors.
The glaze is your classic powdered sugar glaze, but the wet component isn’t just fruit juice, it’s a rich syrup made up of apples, brown sugar, and vegan butter, cooked down until caramelized.
Seriously, just talking about these babies is making me hungry… and I’ve eaten two so far!
- ½ cup mashed ripe banana
- ¾ cup brown sugar
- ½ cup vanilla almond milk (or use unsweetened + 1 tsp vanilla extract)
- ⅓ cup canola oil
- 2-3 tbsp cinnamon
- 1 tsp ground ginger
- 2 tsp allspice
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- pinch salt
- 2-3 tbsp vegan butter
- ¼ cup brown sugar
- 1 medium apple, peeled and diced
- 1½ cups powdered sugar
- Preheat oven to 400° F and line a muffin tin with 9 liners.
- Combine all muffin ingredients until batter is smooth.
- Fill muffin tins about ⅔ of the way and bake for 15-20 minutes or until set and springy.
- Set on a wire rack to cool.
- Meanwhile, in a saucepan over medium heat, combine butter, brown sugar, and apples.
- Cook for 5-7 minutes or until fragrant and cooked down.
- Sift the powdered sugar and add apple mixture ¼ cup at a time until the consistency is right. You may have apple mixture left over.
- Pour glaze over muffins and serve.

Peeling apples isn’t my favorite, but I would definitely do it for these muffins! I love the fall flavors in here, Medha! And that caramel apple glaze looks incredible. I think I would have a hard time spooning this glaze onto the cupcakes without eating it all first! 🙂
