Autumn Spiced Muffins with Caramel Apple Glaze

- ½ cup mashed ripe banana
- ¾ cup brown sugar
- ½ cup vanilla almond milk (or use unsweetened + 1 tsp vanilla extract)
- ⅓ cup canola oil
- 2-3 tbsp cinnamon
- 1 tsp ground ginger
- 2 tsp allspice
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- pinch salt
- 2-3 tbsp vegan butter
- ¼ cup brown sugar
- 1 medium apple, peeled and diced
- 1½ cups powdered sugar
- Preheat oven to 400° F and line a muffin tin with 9 liners.
- Combine all muffin ingredients until batter is smooth.
- Fill muffin tins about ⅔ of the way and bake for 15-20 minutes or until set and springy.
- Set on a wire rack to cool.
- Meanwhile, in a saucepan over medium heat, combine butter, brown sugar, and apples.
- Cook for 5-7 minutes or until fragrant and cooked down.
- Sift the powdered sugar and add apple mixture ¼ cup at a time until the consistency is right. You may have apple mixture left over.
- Pour glaze over muffins and serve.
