Autumn Spiced Muffins with Caramel Apple Glaze

Ingredients
Muffins
  • ½ cup mashed ripe banana
  • ¾ cup brown sugar
  • ½ cup vanilla almond milk (or use unsweetened + 1 tsp vanilla extract)
  • ⅓ cup canola oil
  • 2-3 tbsp cinnamon
  • 1 tsp ground ginger
  • 2 tsp allspice
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • pinch salt
Glaze
  • 2-3 tbsp vegan butter
  • ¼ cup brown sugar
  • 1 medium apple, peeled and diced
  • 1½ cups powdered sugar
Instructions
  1. Preheat oven to 400° F and line a muffin tin with 9 liners.
  2. Combine all muffin ingredients until batter is smooth.
  3. Fill muffin tins about ⅔ of the way and bake for 15-20 minutes or until set and springy.
  4. Set on a wire rack to cool.
  5. Meanwhile, in a saucepan over medium heat, combine butter, brown sugar, and apples.
  6. Cook for 5-7 minutes or until fragrant and cooked down.
  7. Sift the powdered sugar and add apple mixture ¼ cup at a time until the consistency is right. You may have apple mixture left over.
  8. Pour glaze over muffins and serve.
