Life update: my blog is saved!
After spending many many hours with customer service (who were actually so so helpful), all my WordPress issues are resolved!
Now someone just needs to teach me how to backup my content, because I’m notoriously bad at it.
I was thinking about what to post today and this avocado toast seemed like the obvious answer
For one, it’s spring break.
Two, I have so much to say about this bread.
And three, it’s just reeeallly pretty.
Ok so this recipe was going to be avo toast topped with beet slaw (which may still happen!), but the ripe mangos were calling to me. This toast is no ordinary avocado toast. It begins with the BEST EVER bread, aka Trader Joe’s sprouted flourless wheatberry bread (sounds gross, is actually fabulous), and then topped with fresh lemony avo, juicy mango, and crunchy, protein-packed chia and hemp seeds. You just can’t go wrong. Enjoy! xx
- 2 slices of sprouted bread (I used Trader Joe's sprouted flourless wheatberry bread)
- 1 avocado
- Juice of half a lemon
- Salt to taste
- ½ a mango, sliced thinly
- 1 tsp hemp seeds
- 1 tsp chia seeds
- Toast the bread until lightly brown or to your desired crispness.
- Mash the avocado in a bowl with a fork and add lemon juice and salt to taste.
- Place mango pieces on toast and top with the hemp and chia seeds.
