It’s late July, and it feels like summer.
For students like me, school is a distant memory. Waking up earlier than 7 is ridiculous. Bedtimes are always either super early or beyond late
But, as my mother reminded me yesterday, summer is coming to a close. And that means that baking withΒ peaches needs toΒ happen before the season ends.
Summer and peaches are basically synonyms.
The combination of mint and peach in these turnovers is amazing. The mint is biting and the peaches are sweet with brown sugar. The puff pastry Β ties all the flavors together in one delicious, flaky dessert.
These take little prep time and under half an hour in the oven. You also only need seven ingredients, most of which you probably already have.
I don’t make my own puff pastry, because many store-bought brands use no dairy. However, a lot of times this means that the puff pastry contains far too many unidentifiable ingredients. (Sorry, I like to be able to pronounce what I’m eating!).
I would suggest purchasing puff pastry sheets that use only natural oils, or, if you’re not vegan/dairy-free, that use butter. I used Simply Enjoy’s puff pastry sheets, but any should do fine.
These turnovers are a unique alternative to cookies or brownies. They’re not a typical summer dessert, but the flavors scream summer.
I would suggest making a batch of these because they mean that summer has yet to end.
If I keep making these through August and into September, it’s still summer, right?
- 2 tbsp vegan butter
- 3 tbsp brown sugar
- 1 tbsp cornstarch
- 2 peaches, sliced
- 6-8 mint leaves, chopped finely
- 1 sheet of puff pastry
- 1 tbsp soy milk
- Preheat oven to 400Β° F. Line a sheet with parchment paper and set pastry out to thaw.
- Melt vegan butter over medium heat in a medium pan.
- Add brown sugar and stir until well combined.
- Add sliced peaches and mint.
- Stir 5-10 minutes, or until peaches are soft and mint is wilted.
- Add cornstarch and stir for another minute. Take off of heat and set aside.
- Cut puff pastry into squares.
- Put 1 tbsp of filling in each square.
- Dip fingers into soy milk and seal the turnovers by pinching the sides.
- Using a glass like a cookie cutter, trim the edges of the turnovers into a semi-circle.
- Spread out evenly on lined baking sheet and bake for 20-25 minutes or until golden and puffed.

Thanks so much! I would say that background and lighting are very important, as is focusing your iPhone camera. Picking colors that complement each others and props that bring out the colors of the food are also important. Messy color temperature can also definitely ruin a picture! π
