Do you ever feel like people are always doing typical seasonal, outdoorsy activities?
You know that person who goes on at least two hayrides around October, goes caroling in the winter, and participates in something like seven holiday-themed parades every year?
Well last week, that was me. (Kinda). I got five shades darker at the pool. I went peach picking at the farm and shopped for fresh produce. I drove out an hour to picnic and hike all day.
In other words, I made the most of the fabulous late summer weather. Hopefully my Pinterest-perfect seasonal activities continue into autumn and winter!
And speaking of Pinterest, I’ve been pinning like crazy, because the recipes around the internet lately have been a m a z i n g. So without further ado…
Let’s start off healthy with these chickpea and avo lettuce cups!
And this absolutely insane spinach lasagna with cauli noodles (that’s a thing?)
Summer on toast– that’s got to be the prettiest name for food ever!
Healthy one-pot stovetop enchiladas? I mean, if you insist…
Then just obliterate all that with this sinful triple pepper pizza. omg.
These amazingly fudgy flourless brownies– that chocolate sauce though!
And then of course we can’t forget the browned butter brownies 🙂
You know how much I love peanut butter. And peanut butter fudge. On brownies.
And if you don’t love chocolate, these oatmeal raisin blondies look heavenly!
Or try these gf oat crumble bars… with figs (my faves)
If you’re feeling breakfast for dessert, then these cinnamon roll blondies– omg.
Or dessert for breakfast? Try this super dark chocolate walnut zucchini bread.
These PB&J bars are vegan and gluten-free!! (yessss)
Crème brûlée meets lemon bar in these lovely lemon brûlée bars!
If you’re sick and tired of brownies & bars (what’s your damage?) try these chocolate chip cookie dough cupcakes!
Or these packed-with-deliciousness cowboy cookies.
And on the cookie route, these hobnob biscuits are gorgeous.
Or if you hate chocolate (???) , these salted caramel almond cookies are fab!
Not quite cookies, but these black sesame peanut cookie butter truffles (what a flavor combo!)

Haaa, I am TOTALLY that seasonal activity person you speak of… I can’t help it, in the fall I go apple picking, make all things pumpkin, watch Halloween movies & carve pumpkins… In the summer I get to the beach as much as I can, go hiking, walk my dog along the coast, eat way too much watermelon and ice cream, and lots more… I just love celebrating whatever season I’m in I guess! 🙂

What a fun compilation! Glad you are soaking up the summer. We just got back from Miami beach and did our best, too. : ) I am totally not-outdoorsy and prefer the kitchen but once in a while, need some ocean breeze and fresh air.

What a gorgeous round up, Medha! But that photo with the goat may just be my favorite part of the post. It reminds me so much of the farms my family and i visit in the autumn when we go apple picking. Kudos to you for being one of those seasonal outdoorsy people.
