Seedy Sprouted Avocado Toast with Mango {Vegan!}

After spending many many hours with customer service (who were actually so so helpful), all my WordPress issues are resolved!


Now someone just needs to teach me how to backup my content, because I’m notoriously bad at it.

I was thinking about what to post today and this avocado toast seemed like the obvious answer

For one, it’s spring break.

Two, I have so much to say about this bread.

And three, it’s just reeeallly pretty.

Seedy Sprouted Avocado Toast with Mango {Vegan!}

Ok so this recipe was going to be avo toast topped with beet slaw (which may still happen!), but the ripe mangos were calling to me. This toast is no ordinary avocado toast. It begins with the BEST EVER bread, aka Trader Joe’s sprouted flourless wheatberry bread (sounds gross, is actually fabulous), and then topped with fresh lemony avo, juicy mango, and crunchy, protein-packed chia and hemp seeds. You just can’t go wrong. Enjoy! xx

Seedy Sprouted Avocado Toast with Mango {Vegan!}

Avocado toast gets an upgrade on sprouted wheatberry toast with fresh mango and hemp & chia seeds!
Ingredients
  • 2 slices of sprouted bread (I used Trader Joe's sprouted flourless wheatberry bread)
  • 1 avocado
  • Juice of half a lemon
  • Salt to taste
  • ½ a mango, sliced thinly
  • 1 tsp hemp seeds
  • 1 tsp chia seeds
Instructions
  1. Toast the bread until lightly brown or to your desired crispness.
  2. Mash the avocado in a bowl with a fork and add lemon juice and salt to taste.
  3. Place mango pieces on toast and top with the hemp and chia seeds.

    Oh man, I love, love, love a good wheat bread! And then to use that as avocado toast with the mangoes on top? Sign me up for that one! 🙂 So sorry to hear about your blog troubles…there’s nothing worse than having your site go down and then spending hours to get it up again. We’ve all been there! I now backup my site every other Monday. I just put it on my calendar and do it when I’m drinking my morning coffee. Enjoy the rest of your spring break, my friend!

    Yaaaaaay! What a relief to hear all is well again with the site. Technology really is the pits. But when it’s working, it’s pretty awesome! Loving these avo toasts with mango – so packed with flavor, and such an awesome go-to!

    Mmm, I’m always up for avo toast! Mango is so good, but I feel like it’s hard to find them at their right point of ripeness sometimes. I’ve got to try this combo!

    Sorry to hear that you had some technical issues! My computer crashed on me a few weeks ago and I lost years of photos, so I feel your pain. I had actually backed it up but the hard drive all of a sudden became unreadable so yeaaaa I was not a happy camper! I’ll have to spend like an entire day saving photos from my blog & social media back onto my computer. At least I can recover some stuff from there!

      My tip for guessing ripeness is to smell them rather than feeling them! If they’re aromatic they’re usually a go 🙂 And oh noooo that sounds horrible- had a similar issue with my very old MacBook in October 🙁
