Pumpkin Spice Macaroons {Vegan + GF!}

It’s officially fall.

Wait. Not really. But in like two weeks, okay?


This recipe happened before I bought the five cans of pumpkin sitting in a cupboard in my kitchen. But pumpkin flavors were calling, so pumpkin pie spice it was. (That stuff is just so good).

Honestly, there’s not much to say about this recipe.

Pumpkin spice + coconut =Β

This recipe comes together in under half an hour if you’ve got my coconut confection syrup left over from this cake.Β Otherwise, it takes approximately five more minutes.

This isn’t exactly what I’d call a time consuming baking project by any means.

These macaroons are quick, easy, and totally coconutty. (Plus the pumpkin kick to get you in the fall mood!)

And there’s the added bonus of your entire house smelling like pumpkin pie while these goodies bake in the oven.

Pumpkin Spice Macaroons {Vegan + GF!}

Serves: 18-20
 
Easy pumpkin spice coconut macaroons are gluten-free and vegan, perfect for quick fall baking!
Ingredients
  • ¾ cup coconut confection syrup
  • 6 oz sweetened shredded coconut
  • 2 heaping tbsp pumpkin pie spice
  • 1 tbsp coconut oil
Instructions
  1. Preheat oven to 350 F and line a baking sheet with parchment paper.
  2. Combine the first three ingredients in a medium mixing bowl and mix until well combined.
  3. Form into balls and arrange evenly on baking sheet.
  4. Bake for 22-25 minutes.
  5. Remove from oven, drizzle with coconut oil, and let cool on wire rack.
