Happy Taco Tuesday everyone!
I’m quite the fan of tacos, partially because I love Mexican food, but also because you can literally put anything and everything into a taco and it’s delicious!
For these tacos, I went with my summer favorites: mangoes, jalapeños, and of course, guacamole. I also added fresh herbs (mint and basil), and some awesome roasted tofu.
Tofu really tends to get a bad reputation. Some people just really hate it, and other just think they hate it because everyone else does.
However, when it’s covered in delicious spices and roasted till golden brown, let me tell you, this tofu is kinda irresistible.
These tacos are vegan and gluten-free, because I used corn soft tacos. Feel free to make these tacos with soft flour tacos, or even hard shell! These taco toppings/fillings would also be delicious over cilantro-lime rice as a makeshift taco/burrito bowl!
However you choose to enjoy these tacos, one thing is certain: these are serious summer eats. And what better time to share them than on the first day of summer? Enjoy!

- 4-6 soft corn tacos
- 7 oz firm tofu (about half a block)
- 1 tsp cumin powder
- 1 tsp cayenne
- 1 tsp sea salt
- ½ tsp garlic powder
- ½ tsp crushed black pepper
- 1 tsp olive oil
- ½ cup diced mango
- 1 tbsp chopped red onion (about ⅙ of a red onion)
- Half a jalapeño, seeded and finely diced
- 1 fresh basil leaf, torn
- Half a jalapeño, seeded and finely diced
- Pinch of cilantro, chopped finely
- Juice of one lime
- 1 tsp salt
- 1 avocado
- Preheat oven to 350°F and line a baking tray with parchment paper.
- Cut the tofu into thin strips and then cut those into triangles, as shown.
- Combine cumin, cayenne, salt, garlic powder, pepper, and olive oil in a small bowl. Drizzle over tofu until evenly coated and place tofu on baking sheet.
- Bake for 15 minutes, flipping halfway through cooking. Let cool on a wire rack.
- In a separate bowl, combine diced mango, finely chopped red onion, half of the jalapeño, and basil. Mix well and set aside.
- On a chopping board, combine jalapeño and cilantro. Mash avocado with a fork over the jalapeño and cilantro. Add lime juice and salt and mash further.
- If desired, warm tortillas on a dry pan over medium heat.
- To assemble, add 2-3 pieces of tofu to a taco and top with 1 tbsp mango mixture and 1 tbsp guac.
- Serve with additional cilantro, if desired.

I love tofu. LOVE it. I accidentally got some PB on tofu the other day and then (sorry if this sounds gross) loved it so much that I made a roasted tofu and PB sandwich. It was good stuff.
This looks better, though! I’ve always been a taco girl, so these are happening!

Strange issue with the recipes…can’t say I’ve seen that one yet. But I’ve been holding off on the latest update. Whenever Genesis releases an update, I usually wait about 2 weeks before installing it…it’s always buggy at first, so I let the bugs work their way out. Anyways, tacos sound like a great meal tonight. Is #TacoThursday a thing? Because it needs to be. 🙂

I really do love tofu…I usually buy medium firm for stir-fry but have been playing around with extra firm and roasting it. These tacos look delicious. Must be so delicious with the mangoes!
