Welcome to your new obsession.
(Spoiler alert: it’s these cookies)
Raw, vegan, gluten-free, these no bake cookies are healthy, delicious, and enormous (= totally satisfying). Each recipe makes one giant cookie, and the perfect nutritious dessert or even breakfast!
First, my favorite: the coconut chocolate chip. Coconut butter, coconut oil, oats, shredded coconut, a couple dates, and some chocolate chips make this baby full of flavor and totally delicious.
Then we have the cranberry/pistachio/white chocolate. A classic combo, this cookie combines oats, dried fruit, pistachios, and cocoa butter. Soooo good (I thought it would be my least favorite, but then I tried them all and I discovered this is no least favorite!)
And of course I couldn’t do this without a peanut flavor. This time, peanut isn’t paired with chocolate (debauchery!), but rather maple. Ugh, it’s so good, I can’t deal with it. Peanuts, dates, maple syrup, vanilla, and a touch of salt = perfection.
These are addictive, healthy, and soooo easy to whip up. Give ’em a try!
- 3 tbsp GF rolled oats
- 2 pitted dates
- 1 tbsp coconut butter
- 1 tsp coconut oil
- scant ¼ cup shredded coconut
- 1 tbsp chocolate chips
- 2 tbsp GF rolled oats
- 3 pitted dates
- 2 tbsp dried cranberries
- 2 tbsp pistachios
- 2 discs of raw cocoa butter
- 1 tsp vanilla
- 5 tbsp peanuts
- 3 dates
- 1 tbsp maple syrup
- 1 tsp vanilla
- pinch salt
- Combine ingredients in a food processor.
- Transfer to a bowl and push together with a spoon.
- Shape into a disc and let set in fridge for 5 minutes.
This is such a fun cookie recipe, Medha! I’m loving that these are no-bake and vegan. The maple peanut butter version is just calling my name! Yum!
Thanks, Gayle!
I see quite a few raw cookie breakfasts in my future!! These look so good!
Thanks, Joanne 🙂
Woah! 3 times the goodness with this post, Medha! I’m pretty sure I would be all over that maple nut cookie, though. I don’t have any dates at the moment or I’d likely already be in the kitchen making one of these! 🙂
Haha better get some!
Can I have one of each? All three sounds delightful!
(((I may have eaten all three after making them)))
this is smart! love how you have three different types to choose from. definitely gonna have to go with the pistachio and white chocolate one for sure…
Thanks!
These are so perfect, their size is very appropriate as they sound so delicious!
XL is always the way to go 🙂
My boyfriend recently joined me with being gluten free/dairy free, so I’m always on the hunt for sweet treats for him. Love the way these look!
Welcome to the life! Thanks 🙂
Yea please! Oh my, these cookies look amazing. Especially the pistachio white chocolate one. Yummy! Pinned 😀
Thanks for the pin!
Enormous cookies?? You’re speaking my language!

I love putting peanut butter and maple syrup on pancakes, so the idea of turning into a cookie flavor has me totally hooked!
That sounds awesome! Gotta give it a try sometime 🙂
No bake cookies?! Woah. Look like they’re packed with energy!
Definitely!
Love all the variations of these cookies! So fun and healthy! No-bakes are perfect for the warmer weather too! They look awesome!
Thank you!
These are perfect! Too good to be true 🙂 🙂 🙂 Love the variations and how healthy they are!
Thanks so much!
Cookies for breakfast are always a hit with me! If they are vegan and GF that means it’s ok because they’re healthy, right? 🙂 I love that I can have them 3 ways because how would I ever choose?
This time they actually are healthy, yay! 🙂
I am 112% In LOVE with these cookies-3-ways. I mean, raw, gluten free AND vegan? What kind of wizard is living in your kitchen…and where can I get one?!
Hahaha thanks Taylor!
I love these cookies!!! I am SO trying the coconut chocolate chip cookies!!!!
LMK if you try! (My personal fave… coconut butter is a great thing)
Wow, those three babies are calling my name!! Can you also hear, right? Or am I mad ?
The cranberry/pistachio/white chocolate one is shouting louder than the other two, I am positive about that 🙂
Haha thanks!
Cookies that are healthy?? I love it!!
Thank you 🙂
Okay, so I’m in love with how healthy these are and how scrumptious they look! Medha, you’ve outdone yourself. 🙂
Thanks so much, Erin!
These remind me of Larabars, which I love. I’m sure these cookies taste amazing. I want to try the maple peanut flavor! Two of my favorite things in one!
I love Larabars, too, but they are super pricey! Thanks 🙂
SO much coconut goodness in these cookies!! Love all the ways!!

Oh my gosh! I love the maple-peanut combo Medha! That is freakin genius. Also, cookies for breakfast? More genius.
Thanks, Karen!
How fun that these are no-bake! I will definitely have to whip these up for my vegan cousin when she’s in town next week. I think my favorite will be maple peanut because I’m such a peanut butter fan, but who am I kidding…I’ll probably devour them all! Lovely, Medha! 🙂
Thanks!
Ahhh!! Cookies are my all time favourite sweet treats – and I love how healthy these are! 3 ways just means I’m going to have to make and eat all of them myself – far too much temptation. The maple peanut sounds especially amazing!!!
Thank you 🙂
Cranberry, Pistachio, and White Chocolate is one of my all-time favorite combos. I must try these ASAP!!!
Thanks, meagan!
All 3 cookies sound fantastic! So creative!
I wanna try all of them right now, starting with the pistachio-cranberry one ❤️
Thanks, Evi!
I need to get on the raw train so I can eat these cookies! 🙂

Gah just stop already. Enormous is the way to my heart and then you did it times 3. The food processor for the win! And yes, pb + maple and a touch of salt is to die for good 🙂
Haha thanks!
I can’t believe you managed to pack so much goodness in one cookie! Looks amazing!
Thanks, Justine!
I think I speak for everyone when I say Thaaaaaaaank Yoooooooou! I’ve been wanting to do more raw (and vegan) cooking and no-bake “baking” lately, so this is the perfect post! I can already tell you I’m going to be addicted to the Cranberry, Pistachio, and White Chocolate version of the cookie but they all look so dang tasty! Lovin it!
If you’re a fan of raw desserts, you’ll definitely love my next recipe post 🙂
These look SO chewy and delicious!!! I want one for desert right now! Pinning 🙂
