Raw, vegan, gluten-free, these no bake cookies are healthy, delicious, and enormous (= totally satisfying). Each recipe makes one giant cookie, and the perfect nutritious dessert or even breakfast!

First, my favorite: the coconut chocolate chip. Coconut butter, coconut oil, oats, shredded coconut, a couple dates, and some chocolate chips make this baby full of flavor and totally delicious.

Then we have the cranberry/pistachio/white chocolate. A classic combo, this cookie combines oats, dried fruit, pistachios, and cocoa butter. Soooo good (I thought it would be my least favorite, but then I tried them all and I discovered this is no least favorite!)

And of course I couldn’t do this without a peanut flavor. This time, peanut isn’t paired with chocolate (debauchery!), but rather maple. Ugh, it’s so good, I can’t deal with it. Peanuts, dates, maple syrup, vanilla, and a touch of salt = perfection.

These are addictive, healthy, and soooo easy to whip up. Give ’em a try!

These cookies are ridiculously
Ingredients
Coconut Chocolate Chip
  • 3 tbsp GF rolled oats
  • 2 pitted dates
  • 1 tbsp coconut butter
  • 1 tsp coconut oil
  • scant ¼ cup shredded coconut
  • 1 tbsp chocolate chips
Cranberry, Pistachio, and White Chocolate
  • 2 tbsp GF rolled oats
  • 3 pitted dates
  • 2 tbsp dried cranberries
  • 2 tbsp pistachios
  • 2 discs of raw cocoa butter
  • 1 tsp vanilla
Maple Peanut
  • 5 tbsp peanuts
  • 3 dates
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • pinch salt
Instructions
  1. Combine ingredients in a food processor.
  2. Transfer to a bowl and push together with a spoon.
  3. Shape into a disc and let set in fridge for 5 minutes.
