But luckily energy bars are here to the rescue!

I used to think that any snack/protein/breakfast/energy bar was just a “granola” bar, but then I learned all these fun names for them, so you can expect to see a full variety of things in bar form on here at some point.

I love coconut, so I have a habit of just kind of pairing with whatever seasonal flavor I’m working with. Since it’s November, I’m all about Thanksgiving and the winter holidays and cranberries are kinda where it’s at.

But all that holiday eating can sometimes (read: always) be too much. And so these cranberry coconut energy bars are completely sugar-free, vegan, gluten-free, and raw. Definitely a guilt-free breakfast or snack!

Cranberry Coconut Energy Bars {Raw, Vegan, GF, Sugar-Free}

Total time:  15 mins
Serves: 5-7
 
These cranberry coconut energy bars are completely sugar-free, vegan, gluten-free, and raw!
Ingredients
  • 2 cups raw cashews
  • ½ cup dessicated unsweetened coconut
  • 1 cup dried cranberries
  • 3 tbsp water
  • pinch salt
Instructions
  1. Pulse cashews in a food processor until finely ground.
  2. Add other ingredients and pulse till a dough forms. Add more water if the mixture isn't coming together.
  3. Press into the bottom of a parchment paper-lined 8x8 pan and freeze for an hour or refrigerate overnight to set.

    Haha…the arrival of midterms and increase in hot chocolate (and decrease in sleep) are most definitely related! I love these energy bars. The cranberry + coconut flavor would be amazing. Best of luck with midterms…when in doubt, grab an extra hot chocky!

    Midterms and lack of sleep are no bueno! BUT hot chocolate and these energy bars sounds like a fantastic plan! 🙂 LOVING these bars, girlfriend!     I could spend hours in the nut and dried fruit aisle at Trader Joe’s. I love the dried cranberries and definitely need to make these energy bars. I love the addition of the coconut!

    Ah yes. I remember college days with no sleep. When I had to choose between health and school…I chose school. But I think you have a good balance with these bars, even if you are getting no sleep :p (But seriously, you should sleep)
