Today i’m going to be in and out with a quick recipe and not too many words.

Why? It’s been crazy around here lately!

I’ve been doing tech work for dance shows every weekend for a month now in addition to working part-time, so there isn’t a single day (week or weekend!) that I’m not at a rehearsal, show, or at work. It’s nuts.

On top of that, I had an unpleasant experience where I lost about twelve recipes worth of photos. Talk about wasted time, huh?

My food blogger friends will know that we very rarely make the same recipe more than once or twice once it’s done being tested. So rephotographing all my recipes is a hassle I’m not looking forward to during my limited summer time!

It hasn’t been all bad, though. The weather is crazy hot so I’ve been sipping iced coffee and online window shopping in my free time. This pasta is summer in a bowl. Chimichurri is a sauce usually reserved for meat, so of course I used it in a vegan entrée, because that’s typical me. Lots of fresh herbs and spices bring color and flavor to this unusual pasta dish. Enjoy! xx

Angel Hair Pasta with Chimichurri Sauce {Vegan}

Serves: 2-3
 
Ingredients
  • 10 oz angel hair pasta
  • ½ cup parsley
  • ¼ cup cilantro
  • ¼ cup (4-6 large leaves) fresh basil
  • 1 jalapeno, trimmed and seeded
  • 1 clove garlic
  • Juice of half a lemon (1-2 tbsp)
  • 1 tbsp olive oil
  • 2 tsp crushed red pepper flakes
  • ½ tsp ground black pepper
  • Salt to taste
  • Parmesan for topping (optional)
Instructions
  1. In a large pot of heavily salted water, cook pasta according to package instructions (mine took 3 minutes)
  2. Drain pasta and rinse pot with cold water to cool down.
  3. In a food processor, combine parsley, cilantro, basil, jalapeno, garlic, lemon juice, and olive oil until a pesto-like sauce forms.
  4. Put pasta back in (cooled) pot and pour sauce over the pasta. Toss with hands or tongs until evenly coated.
  5. Add salt and pepper to taste and toss.
  6. Serve with crushed red pepper flakes and parmesan, if desired.

    Ohhh shoot, I can so imagine your frustration over the lost photos! 🙁 And your days sound extremely busy indeed, I don’t know how you do it. Let me just say that this looks like a delicious pasta, I’ll have to try a pasta with chimichurri sometime!

    Oh that is such a pain!! Seriously the worst. I feel you on the timing issues and not being able to rephotograph – with full time uni it is such a mission, so if I get one thing photographed every week or two thats an achievement…I can’t imagine losing 12! I’m sure you will photograph each of those even better than the originals though. This pasta looks amazing too – the best kind of dinner for busy days 🙂

    This is such a pretty pasta, Medha! I could eat pasta just about every day, but when you add a chimichurri sauce on top, it pretty much makes it the best! Love this!

    Oh girl, I’m so sorry to hear about the lost work! It’s such a nightmare! I use My PC Backup for backing up my computer every single day because I learned the hard way too many times. I hope you’re able to get everything re-photographed quickly…on the bright side, you can use this as an opportunity to let creativity reign since it’ll be the second time around for the recipes. ANYHOO, this pasta looks FABULOUS! Love that chimichurri!

    OMG, you lost like 12 recipes worth of photos?! I feel your pain, girlfriend! That seriously stinks… BIG TIME! What doesn’t suck though is this pasta! I looooove chimichurri but I never thought to pair it with pasta! GENIUS! And dainty angel hair at that! SO MUCH YUM! Seriously, I just want to twirl this past and shove it into my mouth on repeat! LOVE IT! Cheers!

    You sound so busy and I’m so sorry you lost all those recipes! It’s happened to me on a smaller scale and it’s such a bummer! This pasta looks amazing with that chimichurri, which I would gladly eat with a spoon!

    What a smart, smart idea to use chimichurri sauce for pasta! I’ve made it for steak like everyone else but it makes great sense to use it for a fresh light pasta. Hope things calm down for you!: )

    I absolutely adore chimichurri sauce, but I’ve never thought of putting on pasta and now I’m like WWWHHYYY not?!?! Because it looks so so good! I’ve got to try this soon. Also – so sorry about losing your photos. I feel your pain!!!

    What a fun idea to use chimichurri in a pasta recipe! This looks delicious! And I totally feel your pain about the lost photos. I had an unfortunate incident back around Christmas last year, and now I back all of my stuff up like 3 different ways. Overkill maybe, but I’m determined to not lose stuff again! Good luck!

    Thank you for this recipe – such a great idea! I do always think of chimichurri sauce as a meat compliment, but using it in pasta sounds so good!
