Jumbo Chocolate-Covered Strawberries & Cream Cups {Vegan + GF!}

These cups come together in a flash and can be made with only 3-5 ingredients (depending on how fancy you want to get!). Vegan and gluten-free, these festive cups are a perfect Valentine's Day dessert in a flash.
Ingredients
  • 2 cups powdered sugar
  • 4-6 large fresh strawberries, chopped or sliced
  • 1 cup white chocolate chips, divided
  • ½ cup chocolate chips
  • pink sprinkles (optional)
Instructions
  1. Melt your ½ cup white and regular chocolate chips (separately!) in microwave-safe bowls, stirring at 30 second intervals
  2. Spoon about a tablespoon of melted chocolate into each cupcake liner and brush up the sides about halfway. Freeze for 2-3 minutes.
  3. Meanwhile, melt the remaining ½ cup of the white chocolate chips
  4. Purée the strawberries in a small food processor or blender.
  5. Combine powdered sugar, strawberries, and white chocolate chips and let rest in freezer.
  6. Take filled liners out of freezers and spoon about a tablespoon of strawberry mixture into each cup.
  7. Cover each cup with a cap of chocolate and sprinkles (if desired).
  8. Return to freezer for five minutes.
