{Vegan!} Banana Bundt Cake + Caramel Sauce

- 6 bananas, mashed
- 2¼ cups white whole wheat flour
- 1 cup canola oil
- ¾ cup brown sugar
- 1 tsp vanilla extract
- ¼ cup maple syrup
- 1½ tsp baking powder
- ¾ tsp baking soda
- pinch salt
- 1 cup vegan butter (= 2 sticks)
- ¾ cup brown sugar
- 1 tsp vanilla extract
- Preheat your oven to 350 F.
- Combine all cake ingredients in a bowl.
- Grease your bundt pan and add batter.
- Bake in preheated oven for 40-50 minutes, checking every 5 minutes after 40 mins.
- Cool on a wire rack until totally cooled (approx 45 mins).
- Invert cake onto your desired platter.
- For sauce, melt butter and brown sugar over medium heat in a saucepan.
- Increase heat to medium-high until boiling. Stir continuously for 3-4 minutes while caramel thickens.
- Remove from heat and stir in vanilla.
- Pour over cake and top with walnuts. Serve immediately.
