Combine ingredients for pico de gallo and corn salsa (separately). Reserve a small amount of diced red onion for the guacamole.
In a small saucepan over low-medium heat, combine all ingredients for black beans. Once the mixture is dry and seasoned, add two tablespoons of water and simmer for 3-5 minutes and then remove from heat and set aside.
Meanwhile, mash the avocado and add the lemon juice. Stir in the salts and onion.
Assemble by placing corn chips in a large dish, topping with black beans, corn salsa, pico de gallo, and finally guacamole. Garnish with cilantro and lemon juice, if desired.
