4-Ingredient Vegan Raspberry & Shortbread Jam Bars

The richness of the shortbread contrasts with the tart jam beautifully in the simplest holiday dessert of all time! Four ingredients, vegan, and no-fuss.
Ingredients
  • 1 cup vegan butter (=2 sticks)
  • 2 cups all purpose flour
  • ½ cup sugar
  • 8 oz jam
Instructions
  1. Preheat the oven to 350°F
  2. Combine the first three ingredients (I like to use my hands) until well-combined (slightly crumbly is okay)
  3. Reserve ¼ cup of the dough and press the rest into an ungreased 8x8 glass or non-stick pan
  4. Bake for 15 minutes
  5. Spread the jam over the shortbread crust
  6. Crumble remaining dough over the jam and return to the oven for 5-10 minutes until golden brown
  7. Cool on wire rack before serving
