XL Solo Pumpkin Butter Cup

A quick, delicious, and beyond easy fall dessert- for one! Perfect to satisfy all your pumpkin and chocolate cravings.
Ingredients
  • scant ¼ cup chocolate chips
  • scant ¼ cup powdered sugar
  • 1 heaping tbsp pumpkin butter*
  • ¼ tsp pumpkin pie spice (optional)
Instructions
  1. Melt chocolate chips in a microwave-safe bowl in your microwave oven at 30-second intervals.
  2. Coat the bottom and sides of one large cupcake liner with melted chocolate using the back of a spoon.
  3. Place in muffin tin and stick in the freezer.
  4. Meanwhile, combine pumpkin butter and powdered sugar.
  5. After the cup has been in the freezer for 2 minutes, remove and spoon pumpkin filling into solidified chocolate shell.
  6. Using the remaining chocolate, spoon onto the pumpkin filling and swirl to cover.
  7. Return to freezer for another 5 minutes or until chocolate is all set.
  8. Remove and serve topped with pumpkin pie spice.
