{Vegan/GF/Raw} Salted Chocolate Covered Date Caramels

Ingredients
Date Caramel
  • 2 cups pitted dates
  • 1 tsp vanilla extract
  • ¼ cup warm water
  • ¼ tsp sea salt
Coating
  • ½ cup unsweetened cacao powder
  • ¼ cup coconut oil, liquid
  • 2 tbsp maple syrup/agave/raw honey
  • Flaky sea salt, for topping
Instructions
  1. In a food processor, combined pitted dates, vanilla, and sea salt. Add warm water 1 tbsp at a time until a paste like consistency is created.
  2. Roll date paste into 1 tbsp balls and place on a parchment paper lined baking sheet. Chill in the fridge or freezer.
  3. Meanwhile, combined cacao powder, liquid coconut oil, and maple syrup in a medium bowl with a whisk until homogenous.
  4. Dip each caramel into the chocolate coating and place back on baking sheet. Top with flaky salt and freeze for an additional 5-10 mins before serving. Store in the fridge.
