{Vegan} Mango Tofu Tacos with Spicy Guacamole

Ingredients
  • 4-6 soft corn tacos
Baked Tofu
  • 7 oz firm tofu (about half a block)
  • 1 tsp cumin powder
  • 1 tsp cayenne
  • 1 tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp crushed black pepper
  • 1 tsp olive oil
Mango Salsa
  • ½ cup diced mango
  • 1 tbsp chopped red onion (about ⅙ of a red onion)
  • Half a jalapeño, seeded and finely diced
  • 1 fresh basil leaf, torn
Spicy Guacamole
  • Half a jalapeño, seeded and finely diced
  • Pinch of cilantro, chopped finely
  • Juice of one lime
  • 1 tsp salt
  • 1 avocado
Instructions
  1. Preheat oven to 350°F and line a baking tray with parchment paper.
  2. Cut the tofu into thin strips and then cut those into triangles, as shown.
  3. Combine cumin, cayenne, salt, garlic powder, pepper, and olive oil in a small bowl. Drizzle over tofu until evenly coated and place tofu on baking sheet.
  4. Bake for 15 minutes, flipping halfway through cooking. Let cool on a wire rack.
  5. In a separate bowl, combine diced mango, finely chopped red onion, half of the jalapeño, and basil. Mix well and set aside.
  6. On a chopping board, combine jalapeño and cilantro. Mash avocado with a fork over the jalapeño and cilantro. Add lime juice and salt and mash further.
  7. If desired, warm tortillas on a dry pan over medium heat.
  8. To assemble, add 2-3 pieces of tofu to a taco and top with 1 tbsp mango mixture and 1 tbsp guac.
  9. Serve with additional cilantro, if desired.
