One-Bowl Pumpkin Pecan Chip Cookie Bars {Vegan}

These pumpkin pecan chip blondies are packed full of pumpkin flavor and studded with pecans and chocolate chips. Easy and seasonal, these vegan treats can be made in less than 30 minutes and with one bowl!
Ingredients
  • ½ cup pumpkin pecan butter
  • ¾ cup dark brown sugar
  • 1 tsp vanilla extract
  • ¼ cup pumpkin puree
  • 1½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch salt
  • ½ tsp cinnamon
  • ½ tsp allspice
  • ½ tbsp unsweetened almond milk
  • ½ cup mini vegan chocolate chips + 2 tbsp for topping
  • ¼ cup chopped pecans
Instructions
  1. Preheat oven to 350 F and line the bottom of a greased 8x8 pan with parchment paper.
  2. Combine all ingredients except chocolate chips and pecans in a large mixing bowl with a whisk.
  3. Using a wooden spoon or rubber spatula, stir in ½ cup chocolate chips and pecans.
  4. Transfer to prepared pan and bake in preheated oven for 17-20 minutes, until golden.
  5. Melt 2 tbsp chocolate chips and drizzle over bars.
  6. Cool to room temp on a wire rack before slicing and serving.
