5-Ingredient Mini Vanilla Almond Butter Cookies {Vegan +GF!}

These mini vanilla almond butter cookies can be made with only 5 ingredients and are vegan and gluten-free!
Ingredients
  • 1 cup vanilla almond butter, softened
  • 1 cup + 1 Tbsp ground oat flour
  • 1 cup organic cane sugar
  • 1 large ripe banana, mashed
  • 1 tsp vanilla extract
  • Optional: cane sugar for coating
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large microwave-safe mixing bowl, melt the almond butter and vanilla.
  3. Grind your oat flour (It took about 1¼ cup oats to yield 1 cup + 1 tbsp flour)
  4. Add sugar and mash in banana. Combine with a fork till well mixed.
  5. Add flour until a soft dough forms.
  6. Chill dough for at least half an hour.
  7. Using a half tablespoon cookie scoop, drop rounded balls of cookie dough onto your lined baking sheet. Press slightly to flatten.
  8. Sprinkle cookies with cane sugar.
  9. Bake at 350 degrees for 10-15 minutes and let cool on a wire rack.
