How was your Valentine’s Day weekend?
Mine was super chill. And I mean that literally. Because it was, on average, 0º F this weekend in Connecticut. And that’s not even accounting for the wind chill that pushed temps to what felt like -17º!
One of my favorite things about food blogs is the series of ‘copycat recipes’ I often stumble across.
It’s such a great way to enjoy a restaurant or brand’s classic dish without leaving your house or wondering what kinds of additives are in it- you get to control the flavor and ingredients entirely!
You know that college student trope of living off ramen? Yeah, I never really got that.
No, no, it’s not like I’m saying I’m the health queen at school (I think the lady at the late night falafel truck definitely knows me by face…), but noodles and noodle soup are definitely something that I like to make myself.

I mean of course, apart from having a project, two essays, and two midterms due in the next two days (why). Today we’re actually celebrating something pretty epic….
My first memory of Japanese food involves udon.
My dad used to take me to an Asian market/restaurant by our house that was surprisingly authentic. We would split a vegetable croquette (Think potatoes and vegetables, deep fried. I know) and each get a noodle dish. He would always get soba noodle soup (buckwheat noodles), and for some reason, I’d get zaru udon….
Oh, kitchen fails. When your counter has been floured, wiped down, and floured again and you are slowly depleting your brown sugar supply with nothing to show for it.
Sometimes, (especially when it comes to vegan baking) things (yes I’m talking about you, crumbly linzer cookies!) don’t work out. So I like to beat the complicated-baking-frustration with simple but delicious foods….
I’m calling it right now, this is the prettiest salad you’ll ever eat.
Raw beets just do the most gorgeous things when it comes to color, am I right?…
